  • 18 slices pepperoni
  • 6 garlic cloves, crushed (or use confit garlic)
  • 3/4 cup pizza sauce (or crushed tinned tomatoes)
  • 1 teaspoon salt
  • Good grind of black pepper
  • 1 cup grated mozzarella
  • A handful of fresh basil leaves, chopped
  • 1 tablespoon sweet chilli jam

Pastry and Topping

  • 1 sheet of ready-rolled puff pastry
  • 1/4 cup grated parmesan
  • 1 egg (for egg wash)


Instructions

  1. Prepare oven and pepperoni: Heat your oven to 200C/400F fan and line an oven tray with baking paper. Divide the pepperoni into six piles (3 slices each) and arrange them evenly on the tray.
  2. Add garlic and sauce: Scatter one crushed garlic clove on top of each pepperoni pile. Mix crushed tinned tomatoes with salt and pepper if using instead of pizza sauce, then spoon the pizza sauce or tomato mixture over each pile.
  3. Add cheese: Scatter grated mozzarella evenly on top of the sauce for each tart.
  4. Prepare pastry: Unwrap the puff pastry sheet and slice it into six equal rectangles, ensuring they are large enough to cover each pile of filling completely.
  5. Seal the tarts: Place each puff pastry rectangle on top of the arranged filling and use your fingers to press down and seal around the edges to encase the filling.
  6. Brush and top pastry: Whisk the egg in a small bowl, then brush the top and edges of the puff pastry with the egg wash. Scatter the grated parmesan evenly over the top of the pastry.
