Main Ingredients
- 2 zucchini, sliced thin (approximately 1/8 inch thick)
- 1/4 cup tajín, more or less to taste
- 1/4 cup olive oil for brushing, plus extra if needed
Instructions
- Slice Zucchini: Slice the zucchini into thin ribbons about 1/8 inch thick. Bend a slice to ensure it is thin enough and flexible for skewering.
- Preheat Grill: Heat the grill to high temperature, around 450° to 500° Fahrenheit.
- Season Zucchini: Lay the zucchini slices flat on a baking sheet. Lightly brush both sides with olive oil, then sprinkle evenly with tajín seasoning on each side.
- Weave on Skewers: Carefully thread or weave the seasoned zucchini ribbons onto skewers in a way that holds them securely.
- Grill Skewers: Place the skewers on the hot grill and cook, turning 2 to 3 times for even char and caramelization. Grill for about 10 minutes until tender and nicely charred.
Notes
- Use a mandoline slicer or a sharp knife to ensure even thin slices of zucchini.
- Tajín seasoning adds a tangy, slightly spicy flavor; adjust quantity to your taste preference.
- Olive oil brushing helps prevent sticking and encourages caramelization.
- If you don’t have a grill, you can use a grill pan on the stovetop at high heat.
