Description

Jalapeno Peach Chicken features juicy chicken breasts seared to golden perfection, then baked in a flavorful sauce made from sweet peaches, spicy jalapenos, honey, and apple cider vinegar. This dish offers a delightful balance of spicy, tangy, and fruity flavors, perfect for a satisfying dinner.

Ingredients

Scale

Chicken

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Sauce

  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the chicken after searing.
  2. Season Chicken: Season the chicken breasts evenly with salt and black pepper on both sides for balanced flavor.
  3. Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and sear for 3-4 minutes on each side until golden brown to lock in juices.
  4. Remove Chicken: Take the chicken out of the skillet and set aside to keep warm while preparing the sauce.
  5. Cook Jalapenos and Peaches: In the same skillet, add diced jalapenos and peaches. Cook for 2-3 minutes until they soften slightly, releasing their flavors.
  6. Prepare Sauce: In a small bowl, whisk honey, apple cider vinegar, water, and cornstarch until smooth to make a thickening sauce.
  7. Add Sauce to Skillet: Pour the honey mixture over the jalapenos and peaches, stir well, and bring to a simmer to thicken.
  8. Return Chicken to Skillet: Place chicken breasts back into the skillet, spoon some sauce over each breast to coat them well with flavor.
  9. Bake: Transfer the skillet to the preheated oven and bake for 25 minutes until the chicken is fully cooked through.
  10. Rest and Serve: Remove the skillet from the oven and let the chicken rest for a few minutes before serving. Serve hot with sauce spooned over the top.

Notes

  • Adjust the number of jalapenos to control the heat level of this dish.
  • If fresh peaches are not available, frozen peaches can be used but drain excess liquid.
  • Use an oven-safe skillet to easily transfer from stovetop to oven without extra dishes.
  • Letting the chicken rest after baking helps retain its juices for a tender bite.
  • This recipe pairs well with rice, quinoa, or steamed vegetables for a complete meal.
