Chicken and Marinade

  • 1 ½ pounds chicken thighs
  • ¼ cup avocado oil
  • ¼ cup honey
  • 2 tablespoons tamari
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 ½ teaspoons paprika
  • 1 teaspoon onion powder

Instructions

  1. Prepare the marinade. In a small bowl or measuring cup, whisk together the avocado oil, honey, tamari, minced garlic, apple cider vinegar, paprika, and onion powder until fully combined.
  2. Marinate the chicken. Place the chicken thighs in a large bowl or Ziploc bag and pour the marinade over them. Seal or cover and let the chicken marinate at room temperature for 20 to 30 minutes while you preheat the oven.
  3. Preheat the oven. Set your oven to 400°F (204°C) to prepare for baking the chicken.
  4. Bake the chicken. Remove the chicken thighs from the marinade, reserving the marinade for the sauce. Arrange the chicken on a parchment-lined baking sheet and roast in the preheated oven for 25 minutes until cooked through.
  5. Simmer the sauce. While the chicken bakes, pour the reserved marinade into a small saucepan. Bring it to a boil, then reduce to a simmer and cook for 5 to 7 minutes, stirring frequently until the sauce thickens.
  6. Serve. Place the baked chicken thighs over prepared rice, generously baste with the thickened sauce, and top with sliced green onions, chopped cilantro, and a squeeze of fresh lime juice. Enjoy immediately.
