Simple to make, healthy, high in protein, gluten-free and naturally sweetened, they combine ripe bananas, rolled oats, smooth peanut butter, honey, cinnamon, and optional chocolate chips for a delicious and nutritious breakfast treat.

  • 3 bananas (peeled)
  • 200 g rolled oats
  • 100 g smooth peanut butter
  • 50 g runny honey
  • 1 tsp ground cinnamon
  • 40 g chocolate chips (optional)


Instructions

  1. Preheat Oven: Preheat the oven to 180℃ fan / 200℃ conventional / Gas Mark 6 / 350°F to ensure it's ready for baking the cookies.
  2. Mix Ingredients: In a large bowl, combine the peeled bananas, rolled oats, smooth peanut butter, runny honey, and ground cinnamon. Mash and mix everything together very well until a sticky dough forms. If using chocolate chips, add half of them into the mixture now.
  3. Shape Cookies: Line a baking tray with parchment paper. Scoop the dough into 8 equal portions and shape each into a cookie on the tray. Press the remaining chocolate chips onto the tops of the cookies if using.
  4. Bake Cookies: Place the baking tray in the preheated oven and bake for 20 minutes, until the cookies are set and lightly golden.
  5. Cool Cookies: Remove the tray from the oven and allow the cookies to cool on the tray before moving them. This helps them firm up properly.

Notes

  • Use ripe bananas for natural sweetness and easier mashing.
  • Feel free to substitute honey with maple syrup or agave nectar for a vegan version.
  • Chocolate chips are optional but add a nice touch of sweetness and texture.
