Description
Delight in the juicy sweetness of grilled peaches paired with creamy vanilla ice cream, drizzled with caramel sauce and topped with crunchy pistachios and fresh mint. This simple and elegant dessert is perfect for summer gatherings and ready in just 25 minutes.
Ingredients
Scale
Fruit
- 2 large ripe peaches
Other Ingredients
- 2 tablespoons extra virgin olive oil
- Store bought or homemade vanilla ice cream (4 scoops)
- Store bought or homemade caramel sauce for drizzling
- Fresh mint, roughly minced, for garnish
- Roasted pistachios, roughly chopped, for topping
- Finishing salt, an optional pinch
Instructions
- Halve and Pit the Peaches: Cut each peach along the seam from stem to end, then twist apart the halves. If the pit remains attached, carefully cut around it with a sharp knife and remove it with a spoon.
- Preheat the Grill: Heat a grill or grill pan over medium-high heat. While heating, lightly brush the cut side of each peach half with olive oil to prevent sticking and enhance grilling.
- Grill the Peaches: Place the peach halves cut side down on the grill. Cook for 4 to 5 minutes until grill marks appear and the peaches begin to soften. Flip and grill the other side for 3 to 4 minutes. Remove from heat once tender but still holding shape.
- Assemble and Serve: Allow peaches to cool slightly but remain warm. Plate the halves, top each with a scoop of vanilla ice cream, drizzle with caramel sauce, then sprinkle with chopped pistachios, fresh mint, and a pinch of finishing salt if desired. Serve immediately for best flavor.
Notes
- Use freestone peaches for easier pitting, but clingstone peaches work well too.
- Grilled peaches pair beautifully with ice cream flavors besides vanilla, such as honey or cinnamon varieties.
- To make this dessert vegan, substitute ice cream with a plant-based alternative and use a vegan caramel sauce.
- For a smoky flavor, lightly char the peaches longer but avoid overcooking to maintain their texture.
- Finishing salt enhances the sweetness; use flaky sea salt or Maldon for best effect.
- Chopped nuts can be replaced with almonds or pecans depending on preference or availability.
