Ingredients
Scale
Green Beans
- 1 pound fresh green beans, stem ends snapped off
Seasonings and Cooking
- 1 teaspoon olive oil
- 1/4 teaspoon fine sea salt
- 1/4 cup water or stock
- 1 tablespoon butter or vegan butter
- 3 medium garlic cloves, minced (about 1 tablespoon)
- 1/2 teaspoon lemon zest
- 1/4 teaspoon fresh ground black pepper
- Lemon wedges, for serving
Instructions
- Heat oil and add green beans: Add the olive oil to a wide skillet over medium-high heat. Add the green beans and 1/4 teaspoon of fine sea salt, stirring to coat evenly.
- Sauté green beans: Cook the beans for about 5 minutes, tossing frequently until they are lightly blistered and tender-crisp.
- Add liquid and steam: Pour in 1/4 cup of water or stock, cover the skillet (or use foil if necessary), and cook for 2 minutes to steam the beans.
- Evaporate liquid: Uncover the skillet, reduce the heat to medium-low, and continue cooking until the remaining liquid evaporates completely.
- Add flavorings and finish: Stir in the butter, minced garlic, lemon zest, and black pepper. Cook for another minute while stirring the garlic to release its aroma. Serve immediately with lemon wedges.
Notes
- To store leftovers, let the green beans cool, then place in an airtight container in the fridge for 3 to 4 days.
- Reheat gently in a skillet over medium heat to maintain texture and flavor.
- You can substitute vegan butter to make this dish fully plant-based.
- Using vegetable stock instead of water adds depth of flavor.
