Description

This Garlic Sautéed Green Beans recipe features fresh green beans quickly cooked in olive oil and butter with aromatic garlic and a hint of lemon zest for a simple, flavorful side dish perfect for any meal.

Ingredients

Scale

Green Beans

  • 1 pound fresh green beans, stem ends snapped off

Seasonings and Cooking

  • 1 teaspoon olive oil
  • 1/4 teaspoon fine sea salt
  • 1/4 cup water or stock
  • 1 tablespoon butter or vegan butter
  • 3 medium garlic cloves, minced (about 1 tablespoon)
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon fresh ground black pepper
  • Lemon wedges, for serving

Instructions

  1. Heat oil and add green beans: Add the olive oil to a wide skillet over medium-high heat. Add the green beans and 1/4 teaspoon of fine sea salt, stirring to coat evenly.
  2. Sauté green beans: Cook the beans for about 5 minutes, tossing frequently until they are lightly blistered and tender-crisp.
  3. Add liquid and steam: Pour in 1/4 cup of water or stock, cover the skillet (or use foil if necessary), and cook for 2 minutes to steam the beans.
  4. Evaporate liquid: Uncover the skillet, reduce the heat to medium-low, and continue cooking until the remaining liquid evaporates completely.
  5. Add flavorings and finish: Stir in the butter, minced garlic, lemon zest, and black pepper. Cook for another minute while stirring the garlic to release its aroma. Serve immediately with lemon wedges.

Notes

  • To store leftovers, let the green beans cool, then place in an airtight container in the fridge for 3 to 4 days.
  • Reheat gently in a skillet over medium heat to maintain texture and flavor.
  • You can substitute vegan butter to make this dish fully plant-based.
  • Using vegetable stock instead of water adds depth of flavor.
