  • 3 1/2 cups chicken broth
  • 2 tablespoons no-salt or low-salt Cajun seasoning mix
  • 7 oz. cream cheese

  • Fresh Italian parsley (finely chopped, optional)

Instructions

  1. Cook sausage: Add the sliced sausage medallions to a large skillet or braiser over medium heat and sear them on both sides until they crisp up slightly, about 4 minutes total. Remove the sausage from the skillet and place on a paper towel-lined plate to drain excess oil. Keep the sausage oil in the pan for added flavor.
  2. Cook veggies: In the same skillet with the sausage oil, add the sliced mushrooms, red and yellow bell peppers, and minced garlic. Sauté for about 3 minutes until the mushrooms begin to brown and the veggies are slightly softened.
  3. Add ingredients: Stir in the gluten-free penne pasta, diced fire-roasted tomatoes, chicken broth, and Cajun seasoning. Combine everything evenly, then cover the skillet with a lid and bring the broth to a boil.
  4. Cook pasta: Reduce the heat to medium and allow the pasta to simmer uncovered for about 15 minutes, stirring every couple of minutes, until the pasta is tender and cooked al dente.
