Instructions

  2. Add garlic and ginger: Stir in the minced garlic and thinly sliced or minced ginger, continuing to sauté for a few more minutes until fragrant and aromatic.
  3. Add liquids and simmer: Pour in the full-fat coconut milk, chicken broth, red curry paste (adjust to taste), fish sauce, lime zest and juice, and chopped fresh tomatoes. Cover the pot and bring the soup to a full boil. Then immediately reduce the heat to medium-low to maintain a gentle simmer, and cook for 30 minutes to blend flavors.
  4. Cook the fish: Add the white fish fillets to the simmering soup and cook for an additional 10 minutes, or until the fish reaches an internal temperature of 145 degrees Fahrenheit. Use a thermometer to ensure doneness.
  5. Break fish into pieces: Using tongs, transfer the fish fillets to a cutting board. Break the fish into bite-sized pieces with a fork, then return the chunks to the soup.
  6. Serve: Give the soup a good stir to combine. Serve hot in bowls garnished with fresh cilantro, chopped green onions, and lime wedges. Enjoy with side dishes like crusty bread or salad if desired.
